Summary

With his fabulous restaurants and bestselling Ottolenghi Cookbook, Yotam Ottolenghi has established himself as one of the most exciting talents in the world of cookery and food writing。 This exclusive collection of vegetarian recipes is drawn from his column 'The New Vegetarian' for the Guardian's Weekend magazine, and features both brand-new recipes and dishes first devised for that column。

Yotam's food inspiration comes from his strong Mediterranean background and his unapologetic love of ingredients。 Not a vegetarian himself, his approach to vegetable dishes is wholly original and innovative, based on strong flavours and stunning, fresh combinations。 With sections devoted to cooking greens, aubergines, brassicas, rice and cereals, pasta and couscous, pulses, roots, squashes, onions, fruit, mushrooms and tomatoes, the breadth of colours, tastes and textures is extraordinary。

Featuring vibrant, evocative food photography from acclaimed photographer Jonathan Lovekin, and with Yotam's voice and personality shining through, Plenty is a must-have for meat-eaters and vegetarians alike。

If you like Ottolenghi, he gives you plenty of his signature "vibrant" vegetable based dishes in this book。 The ingredient lists are long and these are not recipes to make on the go。 Like all of his offerings, the dishes are beautiful to behold, but honestly, I doubt I'll spend the time required to make of most of what is included in these pages。 (Refer to my review of Ottolenghi Simple。) If you like Ottolenghi, he gives you plenty of his signature "vibrant" vegetable based dishes in this book。 The ingredient lists are long and these are not recipes to make on the go。 Like all of his offerings, the dishes are beautiful to behold, but honestly, I doubt I'll spend the time required to make of most of what is included in these pages。 (Refer to my review of Ottolenghi Simple。) 。。。more

If you're unfamiliar with Plenty, it's full of "Vibrant Vegetable Recipes。" The book is divided into almost every kind of vegetable there is from "Roots" to "Leaves。" It also covers "Pulses" which includes hummus and soups and sections including grains and pasta。 The photographs are tremendous。I've made the Tw0-Potato Vindaloo (18), Freekeh Pilaf (241), Multi-Vegetable Paella (80), and the Very Full Tart (84)。 All were beyond words。 I've earmarked the Caramelized Garlic Tart (38) and his Shakshu If you're unfamiliar with Plenty, it's full of "Vibrant Vegetable Recipes。" The book is divided into almost every kind of vegetable there is from "Roots" to "Leaves。" It also covers "Pulses" which includes hummus and soups and sections including grains and pasta。 The photographs are tremendous。I've made the Tw0-Potato Vindaloo (18), Freekeh Pilaf (241), Multi-Vegetable Paella (80), and the Very Full Tart (84)。 All were beyond words。 I've earmarked the Caramelized Garlic Tart (38) and his Shakshuka recipe (87) to try next。 I know that Ottolenghi has a plethora of cookbooks out there and I would like to pick them up to review at some point。 For now, I will keep with Plenty。 It's a great book and was his second cookbook published (after Ottolenghi: The Cookbook in 2008)。 Since Plenty's publication in 2010, he has published six more tomes。 。。。more

I have the budding suspicion that the title “Plenty” is a result of negotiations between the publisher and Ottolenghi, who had possibly called his book “Plenty of Oil” originally。 Every 4th or so recipe involves shallow frying something spongy like eggplants or tofu, and every now and then the end result is then mixed in a sauce made of a whole stick of butter or the like。 Vegetarian cookbooks are supposed to help me “reduce my meat consumption”, but now I wonder if eliminating me by ways of a h I have the budding suspicion that the title “Plenty” is a result of negotiations between the publisher and Ottolenghi, who had possibly called his book “Plenty of Oil” originally。 Every 4th or so recipe involves shallow frying something spongy like eggplants or tofu, and every now and then the end result is then mixed in a sauce made of a whole stick of butter or the like。 Vegetarian cookbooks are supposed to help me “reduce my meat consumption”, but now I wonder if eliminating me by ways of a heart attack is what they really meant by that。 (And I am also very curious whether Abbey Sharp*, who has this book displayed on set in the background, has ever actually opened it and looked at the recipes。 I have questions。)The dishes range from “okay” to “pretty tasty”, but not “OMG-I’m-gonna-make-this-every-week” tasty, and some list ingredients that are as easy to find in a grocery store for common mortals as bottled teardrops of a 13-week-old unicorn harvested at the second full moon of the year while wearing a pink tutu。 I am also not willing to sell my house for some saffron。I was looking forward to this book and really wanted to love it, but I often find myself just avoiding it and selecting something with a better result to effort ratio instead。 It is 3。5-star cookbook for me。*Dietitian with a YouTube channel I used to watch 。。。more

I wanted to love this cookbook。 But the ingredients are kind of difficult to find。 They take forever to make。 Pretty pictures but really not for me。 Maybe a restaurant entrepreneur or a chef looking for restaurant inspiration would enjoy this book。 I flagged the sweet potato pancakes but I never ended up making them。 So labor intensive and if I remember 。。。 they get smoky and make your kitchen stink。 And for what? A mediocre side dish that I could have made in the oven and make the kitchen smell I wanted to love this cookbook。 But the ingredients are kind of difficult to find。 They take forever to make。 Pretty pictures but really not for me。 Maybe a restaurant entrepreneur or a chef looking for restaurant inspiration would enjoy this book。 I flagged the sweet potato pancakes but I never ended up making them。 So labor intensive and if I remember 。。。 they get smoky and make your kitchen stink。 And for what? I wanted to love it but was really disappointed by this cookbook。 I've tried a number of recipes all of which were pretty complicated, taking a good deal of time and effort while dirtying an exorbitant number of bowls, pots, and utensils。 I don't mind putting in the effort if the result is going to be fantastic but I have yet to try a recipe from this book that wasn't just okay。 I was also frustrated by the fact that not every recipe had photos, especially because some of the pictures were of th I wanted to love it but was really disappointed by this cookbook。 I've tried a number of recipes all of which were pretty complicated, taking a good deal of time and effort while dirtying an exorbitant number of bowls, pots, and utensils。 I don't mind putting in the effort if the result is going to be fantastic but I have yet to try a recipe from this book that wasn't just okay。 I was also frustrated by the fact that not every recipe had photos, especially because some of the pictures were of things that weren't super relevant to the recipe like a stack of bowls or a generic kitchen scene。 。。。more

So many delicious looking recipes。 Multiple pages marked。 But there’s some that don’t speak to me。 All recipes, no stories。 I miss the stories。

Everyone seems to really enjoy this cookbook。 However, I only found a couple recipes I would consider making at home。

I love the approach to cooking Ottolenghi takes, even if his recipes have 10,000 ingredients。 The approach here provided a nice framework for playing around with vegetables, but I would choose Flavor as the better of his two books I just got。 It had more structures and concepts I can transition to my own recipes, and while it calls for the dreaded specialty ingredients, I owned more of them and didn't necessarily need them to be able to recreate the dishes。 I love the approach to cooking Ottolenghi takes, even if his recipes have 10,000 ingredients。 The approach here provided a nice framework for playing around with vegetables, but I would choose Flavor as the better of his two books I just got。 It had more structures and concepts I can transition to my own recipes, and while it calls for the dreaded specialty ingredients, I owned more of them and didn't necessarily need them to be able to recreate the dishes。 。。。more

Fancy recipes, lovely photos!

My main qualm is that the ingredient lists are just too damn long and that they sometimes contain weird things that you won't necessarily have access to。 HOWEVER, when you are able to wrangle up enough of the ingredients to make an honest attempt, it's ALWAYS delicious, and although the ingredient lists may be complicated, the instructions are not。 My main qualm is that the ingredient lists are just too damn long and that they sometimes contain weird things that you won't necessarily have access to。 HOWEVER, when you are able to wrangle up enough of the ingredients to make an honest attempt, it's ALWAYS delicious, and although the ingredient lists may be complicated, the instructions are not。 。。。more

We love this (and the other) Ottolenghi books。 The dishes are actually quite easy to make and once you have your essential store of spices, really easy to shop for。 Like all cookbooks, we have our favourites but also lots more marked to try。 I'm not a huge fan of middle eastern flavours but Yotam's recipes don't go overboard and hit the right balance。 I can highly recommend this for a family cookbook, for adding meatless dishes to your roster。 We love this (and the other) Ottolenghi books。 The dishes are actually quite easy to make and once you have your essential store of spices, really easy to shop for。 Like all cookbooks, we have our favourites but also lots more marked to try。 I'm not a huge fan of middle eastern flavours but Yotam's recipes don't go overboard and hit the right balance。 I can highly recommend this for a family cookbook, for adding meatless dishes to your roster。 。。。more

This is not what you really think is JUST A COOKBOOK。 I made gift for my daughter, my daugther in low and me。The recipes and cooking are very simple, almost no cooking, some grilled, some poached but all the taste is coming from very unusual and strange combination of spices that I never heard (I have my food blog) and I look all the time for recipes and new way。。。。I made some recipes from this book and are very tasty and easy to make。

After reading this, I have realized that my favorite Ottolenghi recipes are Ottolenghi recipes adapted by Deb Perelman。 I love and am familiar with most of the ingredients listed, but the recipes require more steps than I want to attempt on a weeknight。 This book came out in 2010, so it was probably more groundbreaking at the time with the vegetarian Middle Eastern food。 So thank you, YO, for bringing your style to the mainstream! This is a beautiful book of unique recipes。 It’s no fault of the author that most of them are above my pay grade and require lots of hard to find ingredients that I’m not at this point willing to track down。 On the upside, since so many are Mediterranean-inspired, I found some great new recipes that make use of random spices I do have, like sumac and za’atar。 I did save a number of recipes to try and reading through this gave me some great inspiration for dishes more within reach。

Michelle Davies

So many inspiring vegetarian recipes which really showcase the vegetable(s) in each dish

Complicated recipes but interesting for spicing inspiration

There are some really delicious looking recipes, but goodness, most of them had a whole lot of ingredients。 Maybe wrongly, but that usually turns me off。

A great book - great recipes - but one has to have time to cook them!

When I bought this book during grad school in Boston, I found it to be the perfect resource for my CSA box。 Jerusalem artichoke? Celeriac? No problem。 Ottolenghi has a recipe for that, and it will be delicious。 My only complaint- and it’s a common one - is how complex the ingredients lists get。 But now that I’ve gone back to the CSA life during quarantine I’ve been returning to this book for inspiration, and it has served me well。
