Lots of beautiful photographs to accompany the recipes。 Narratives on opening Momofuku, Ssam and Ko, very much condensed from Eat a Peach。 I enjoyed the chapter on Allan Benton and his ham and bacon smoking。

A story of opening of Momofuku and Ssam bar, told straight。 With all the naivety, that was present, when they were opened。 Including all the recipes。。。 Fantastic read。 Honest, entertaining and insightful。

I thought this was a fabulous book。 Not only gives an insight into the restaurant world and all that that entails, but a very personal look at mental health。 David Chang was a good friend of Anthony Bourdain which only makes this book more powerful and relevant

What a peach!I flippen’ love this book。 As a professional chef I love the recipes and how thoughtful and mouth-watering they are but more importantly I enjoy David Chang’s candidness。 It feels like you’re listening to a friend sit down and have a chat about their life with you。 He deserves all the accolades and attention he’s received, even if he’s humble about it。 Love your work mate!

Not knowing this was a cookbook, I went in basically expecting a detailed report on how ramen noodles became such a big deal in America。 I finished it with that expectation partially met and my eyes opened to the vast, cut-throat world of Asian cuisine in America。

So I became a fan of David Chang after watching Ugly Delicious on Netflix。 I loved his outlook on food, his general attitude, and basically all the food he made and featured。 Reading his cookbook was a given。Like he says at one point in this massive autobiographical cookbook-type thing, Momofuku is less a cookbook and more a way of getting all of what happened throughout Noodle Bar and Ko and etc。 written down somewhere。 So what we have here is a bunch of notes about food, passages about the wil So I became a fan of David Chang after watching Ugly Delicious on Netflix。 I loved his outlook on food, his general attitude, and basically all the food he made and featured。 Reading his cookbook was a given。Like he says at one point in this massive autobiographical cookbook-type thing, Momofuku is less a cookbook and more a way of getting all of what happened throughout Noodle Bar and Ko and etc。 written down somewhere。 So what we have here is a bunch of notes about food, passages about the wild things that happened to him while trying to open his restaurants, and the recipes he makes in his restaurants (the failed and successful)。 It sounds messy, but it actually works。But, as he had said, it’s kind of less of a functional cookbook than it is a “this is how we make everything and how we did everything” kind of log。 Of course, because it’s not actually designed for the home cook in mind, most of the recipes included aren’t actually doable for the average person。 In an average kitchen … the “48-hour Short Rib” comes to mind, with its need for a water circulator and constant tending。 To his credit, though, David Chang makes a mention of the fact that it’s probably not going to work in a home kitchen。There are also hard-to-find or expensive ingredients in the recipes, things like meat glue, alkaline salts, and Allan Benton’s bacon (he’s very specific about this one)。 However, at the very end of the book, he has a page about where to find each ingredient。 Doesn’t help with the price, though!So while many of these recipes are beyond my ability and price range, they were still interesting。 And I definitely enjoyed reading about how David Chang’s restaurants began and reading about the interesting events and the massive amount of luck that got him to where he is today。 。。。more

This book is beautifully written and has amazing recipes that I look forward to trying。 The only reason this book is getting a four star rating as opposed to a five star one is that dispute this being a cookbook that I’m assuming is meant to be used for in-home cooking, a few of the recipes are simply impractical for it, especially if you aren’t feeding a lot of people or don’t have a lot of space to store food。 Other then that, I’m looking forward to trying what I can!

I'm really enjoying this, and hope to eat at the restaurant someday。 What I've learned so far。。。。there is such a thing as Maine Jonah Crab Claws。 (Similar to stone crab claws you get in Florida。) I did not know these existed, but had them for dinner last night。 So happy to know about them!
