beautiful pictures and lots of interesting and new combinations of flavours and techniques。。。 although requires the right audience for these recipes - ideally those with no food allergies/restrictions and openness to new flavours。 My household is not at that point right now。

A very close toss up between 4 and 5 stars。The good:* I want to cook almost everything in this book - it's rare for me to want to make such a high proportion of the dishes。* Most recipes include an ingredient or technique outside of my comfort zone, but not so far outside that it's intimidating。 It's in the Goldilocks zone of cookbooks and very inspiring for the amateur fusion cook!* Beautiful photos of every dish, with great attention to detail on presentation。* Summarises all the cool sauces, A very close toss up between 4 and 5 stars。The good:* I want to cook almost everything in this book - it's rare for me to want to make such a high proportion of the dishes。* Most recipes include an ingredient or technique outside of my comfort zone, but not so far outside that it's intimidating。 It's in the Goldilocks zone of cookbooks and very inspiring for the amateur fusion cook!* Beautiful photos of every dish, with great attention to detail on presentation。* Summarises all the cool sauces, marinades and dressings that can be made in batches and stored for later use to spice up other meals。* Includes pairings for each recipe in case you don't know how to incorporate it into a meal plan。* Very nicely presented and just the right length of preamble to chapters and recipes to add context but not detract from the main purpose of cooking。The not so good:* Intros to the chapters feels very comparable to Salt, Fat, Acid, Heat but without so much of a clear direction, so probably unlikely to reuse these for reference。 * Grouping together multiple recipes steps in one bullet point is a real bugbear of mine - I don't like one step in a recipe to be a dozen lines long with a dozen substeps and taking several hours to complete。 Feels like a case of trying to hide the complexity when the recipe could also afford to be a little simpler。* A little cringey at times。Would very much recommend for the unique recipes。 。。。more

This book is a fascinating take on plant based recipes, and I will definitely try a few of the recipes but even for me (a fairly adventurous home vegan cook) I found some of the ingredient lists to be a tad overwhelming。 I have no idea where I would find some of these exotic sounding ingredients but we will see。 I would say this book is for the highly adventurous home chef。 I also wish there were pictures of every recipe, I would rather fewer recipes and more pictures 。

An amazing vegetarian cookbook。

Everything seems amazing but so intimidating。

Mairzi

Gorgeous book with unnecessarily complicated recipes and ingredients that are not always easy to source。 Also Cookbooks should not be so heavy that they are difficult to carry。

The recipes are probably delicious and the photos are gorgeous but this cookbook is not for me。 These recipes look tasty but are not healthy, balanced (where's the protein?), or quick。 Most of the recipes call for at least a couple of hard-to-find ingredients and there are usually 15 to 20 different ingredients per recipe。 I'm too old and tired to bother。 The recipes are probably delicious and the photos are gorgeous but this cookbook is not for me。 These recipes look tasty but are not healthy, balanced (where's the protein?), or quick。 Most of the recipes call for at least a couple of hard-to-find ingredients and there are usually 15 to 20 different ingredients per recipe。 I'm too old and tired to bother。 。。。more

I’ve never used a book as often as this! So many amazing veggie meals and combinations you wouldn’t think to put together but taste amazing when you do。

I won a free copy of this book as part of a giveaway here。 So far I'm loving it。 I'm, admittedly, not the cook in the family, but my wife is a big fan of Ottolenghi and I'm a big fan of what she cooks when she's reading one of his books。 I can't say anything about the written content, though my wife tells me its good。 But I can say the recipes are delicious and I'm looking forward to tasting more of them。-A very happy and lucky husband。 I won a free copy of this book as part of a giveaway here。 So far I'm loving it。 I'm, admittedly, not the cook in the family, but my wife is a big fan of Ottolenghi and I'm a big fan of what she cooks when she's reading one of his books。 I can't say anything about the written content, though my wife tells me its good。 But I can say the recipes are delicious and I'm looking forward to tasting more of them。-A very happy and lucky husband。 。。。more

Beautiful to look at but nothing I would actually try to make at home。

If you were hoping for another cookbook flavored with Israel/middle-eastern recipes, pass this one by。 But you might be sorry。 The veggies, flavored with exotic (and not so exotic if you have ethnic or larger markets nearby)。 Curried Carrot Mash with Brown Butter and Butter Beans in Smoked Cascabel Oil are by themselves totally worth the cost of the book。But don't bother trying to find anything specific in the index。 For example, those Butter Beans? Always a treat to read books by Ottolenghi, they combine flavor, history, veggie goodness, unique applications and combinations and art。 I particularly like the discourses on process。

Another beautifully crafted cookbook from Ottolenghi。 Not only are his cookbooks nicely designed with lots of colour photographs but they feature recipes that one would want to make。 This cookbook is devoted to a host of vegetarian inspired recipes。

The recipes sound amazing, but I haven't actually cooked any yet。 I am not a vegetarian; my goal is to change my meal preparation from meat centered to a super delicious plant-based dish to complement a small portion of simple meat (like roasted chicken。 I've tried other vegetarian cookbooks, but was underwhelmed by the lack of flavor。 These recipes have me feeling more optimistic。 The recipes sound amazing, but I haven't actually cooked any yet。 I am not a vegetarian; my goal is to change my meal preparation from meat centered to a super delicious plant-based dish to complement a small portion of simple meat (like roasted chicken。 I've tried other vegetarian cookbooks, but was underwhelmed by the lack of flavor。 These recipes have me feeling more optimistic。 。。。more

My daughter spent her hard-earned money buying me this book for my Christmas present。 She was fooled by its trendy looking cover and colourful photos。I have perused its 300 pages several times now and not found one, single recipe I want to try。 In fact, some are utterly repulsive: "The Ultimate Traybake Ragu" looks like a plate of pasta with fried mince and nothing else。 I think that was the only recipe that had meat in it and seemed to be added as an afterthought。 I have to admit, the photograp My daughter spent her hard-earned money buying me this book for my Christmas present。 She was fooled by its trendy looking cover and colourful photos。I have perused its 300 pages several times now and not found one, single recipe I want to try。 In fact, some are utterly repulsive: "The Ultimate Traybake Ragu" looks like a plate of pasta with fried mince and nothing else。 I think that was the only recipe that had meat in it and seemed to be added as an afterthought。 I have to admit, the photography is nice。 。。。more

Got this from the library and have it on my list to buy。 WHAT A GEM。 This was just the book I needed to bring some excitement to my cooking for one in quarantine, missing restaurants and travel。 Great vegetarian recipes to try out new twists and Interesting combos。 Great as mains or as side dishes。 Have heard of Ottolenghi for years and have tried a few recipes I’ve seen online but his book is so much better。 Why did I wait so long to check him out? Highly recommend。 Don’t wait like I did。

Jaime

Delicious recipes that will make even the biggest veggie hater want more

I don't usually read a cookbook from cover to cover。 This being vegetable based it seemed a good place to start for a confirmed carnivore。 It was worth it。 I don't usually read a cookbook from cover to cover。 This being vegetable based it seemed a good place to start for a confirmed carnivore。 It was worth it。 。。。more

One of the best vegetarian cookbooks that I have found to date! Recipes supersede Plenty and provide vibrant delicious fusion options! Don’t miss out on: Eggplant Dumplings, Tofu Meatball Korma, Cardamom Tofu and Sweet Potato in Tomato and Lime Sauce。

A gift from my brother and his husband。 A revolutionary view on veg that clearly and passionately explains both why and how。 These ideas have really elevated my food。 More importantly the concepts carryover into every recipe I make。 Flavor bombs!

Pamela

Very detailed recipes and great pictures!

I've cooked multiple pasta dishes from the book and while I know Ottolenghi recipes always seem like a big to do, the pay off is worth it。。 I had to separately fry garlic and make pickles for a black lime tofu dish, but dang if that wasn't the best thing I ate all week。 I would definitely recommend! Received in giveaway! I’ve been holding off adding it because honestly I haven’t actually made anything from it yet, but it’s a beautiful book。 There’s a ton of information and I WANT to eat everything shown in it, there’s so many interesting ways to prepare vegetables。

Beautifully photographed and deliciously described。
