Summary

More than 100 beautifully simple recipes that teach you the basics of a great vegan meal centered on real food, not powders or meat substitutes--from the James Beard Award-winning chef and author of Afro-Vegan

Food justice activist and author Bryant Terry breaks down the fundamentals of plant-based cooking in Vegetable Kingdom, showing you how to make delicious meals from popular vegetables, grains, and legumes。 Recipes like Dirty Cauliflower, Barbecued Carrots with Slow-Cooked White Beans, Millet Roux Mushroom Gumbo, and Citrus & Garlic-Herb-Braised Fennel are enticing enough without meat substitutes, instead relying on fresh ingredients, vibrant spices, and clever techniques to build flavor and texture。

The book is organized by ingredient, making it easy to create simple dishes or showstopping meals based on what's fresh at the market。 Bryant also covers the basics of vegan cooking, explaining the fundamentals of assembling flavorful salads, cooking filling soups and stews, and making tasty grains and legumes。 With beautiful imagery and classic design, Vegetable Kingdom is an invaluable tool for plant-based cooking today。

The dishes in this book look amazing - I can almost imagine what they taste like。 The only thing I wish is that someone else cooked this for me。 It’s just while I realize that is not that difficult, it is the long list of ingredients that puts me off。

Glad I borrowed this from the library。 Found only a couple recipes I would try。 Organization of the chapters were not the best, challenging to find entrees vs。 side dishes。 Many recipes were complicated, time consuming, and called for not easy to find ingredients

This book is fabulous !

I love this book-- the look, the feel, the stories, and the food sounds sublime。 But lots of steps and ingredients in the recipes that I just won't devote the time to。 I love this book-- the look, the feel, the stories, and the food sounds sublime。 But lots of steps and ingredients in the recipes that I just won't devote the time to。 。。。more

This is probably my favourite cookbook I've ever owned。 The recipes are very unique, though often including many ingredients and taking a bit more time than other types of cookbooks, they are very much worth it! As much as I like his books, it's hard to get up the enthusiasm to cook with only 2 people in our house。 Maybe more for reading than for cooking which I know is not uncommon for people and cookbooks, but is unusual for me。 I do want to EAT the vast majority of these recipes! Overall a great cookbook, what I made tasted good/great。 However the recipes can be a bit labor intensive, the most annoying of this is recipes that actually require multiple recipes to complete (ie the cover picture dish recipe requires 3 other recipes from the book) or a dish requires much chopping/dicing (given my knife skills I'm probably taking 5-10x to chop/dice than a professional like Terry) and lastly I do prefer pictures of all the finished dishes。 What I made Warm butter bean salad - Overall a great cookbook, what I made tasted good/great。 However the recipes can be a bit labor intensive, the most annoying of this is recipes that actually require multiple recipes to complete (ie the cover picture dish recipe requires 3 other recipes from the book) or a dish requires much chopping/dicing (given my knife skills I'm probably taking 5-10x to chop/dice than a professional like Terry) and lastly I do prefer pictures of all the finished dishes。 What I made Warm butter bean salad - fantastic, I had a long standing bias against lima beans that this dish destroyed。 Will definitely make again。 (requires making separate recipe for pili pili oil)Dirty Cauliflower - delicious, used shiitake mushrooms instead of porcini which I couldn't find anywhere。 would definitely make again but with a least double the cremini mushrooms。Pikliz - basic in a good way pickle, definitely see how you could switch up the veggies and heat。Stewed Peppers - another basic recipe, liked the inclusion of mini sweet peppers, but not convinced the extra vinaigrette that had to be made impacted the dish。Here's my little side rant about the additional sauces, etc needed for recipes that I see in many professional chef cookbooks and is present here。 The Pili Pili oil, mentioned above, the recipe makes one cup, it's good for 2 weeks, the butter bean salad recipe called for 2 tablespoons - what do you do with the rest? I've just wasted almost a cup of good olive oil。 and when you look at the index for pili pili it only has the recipe listed not any of the recipes that use it。 。。。more

I love the way this book is laid out - an easy, technique-introducing recipe at the beginning of each section, followed by recipes that build upon that one。 And every recipe we've tried so far has been a keeper。 I love the way this book is laid out - an easy, technique-introducing recipe at the beginning of each section, followed by recipes that build upon that one。 And every recipe we've tried so far has been a keeper。 。。。more

beautiful recipes - some have sauces that are best made a day or two in advance。

I don’t plan on making any recipes from this book - they all look like too much work。

I wish the table of contents was more functional: soups, salads, main dishes。Bryant Terry disdains plant-based protein, e。g。, burgers, sausages。 Some are excellent and keep improving。 I would have liked recipes including some of these。 Otherwise, brilliant, interesting, exciting recipes and writing!

Wonderfully organized, with important sections on how to use the book, tools needed to cook, what to keep in your cupboard, plus a cooking playlist! And great recipes organized by food group。 Plus it's a very beautiful book。 Wonderfully organized, with important sections on how to use the book, tools needed to cook, what to keep in your cupboard, plus a cooking playlist! This book is beautiful, and I think the author is awesome。 So much exciting work。 I love that the recipes have song recommendations to go with them, as music is usually a part of my cooking! The recipes are a bit more involved than I am able to do at this time in my life, but I would love to pick this up again when I have more adventurous eaters in the house!

Bryant Terry's recipes are always exceptional, and this book carries on that tradition。 Everything is SO GOOD。 Like blow your friends' and family's minds away good。 While a few recipes are simple, some can involve a lot of steps。 The key is to make them when you have the time to enjoy it - put on the music he recommends, work your way through the steps, and I guarantee you will never be sorry you did! Bryant makes you excited about food! His passion comes through in each story before his recipes (and the songs provided)。 This cookbook is categorized by vegetable, not by type of dish (side, main, or snack)。 Excited to try some of the cauliflower dishes! Overall, great detailed recipes and beautiful photos to match。

Nope, not for me。

If you haven't heard of Bryant Terry, I feel fucking sorry for you。 His book is incredibly well-structured, and the recipes HIT SO HARD。 Do you wanna eat what Angela Davis ate at her 75th birthday party? GET THIS BOOK! All I want to do after reading this book is read another Bryant Terry book。Not only are the recipes amazing, but this book contains incredible anecdotes from Terry's career。 Some of the stories are so full of heart, they make me artichoke up。 HA! A wonderful journey into the world of soulful vegan cooking。 The recipes were easy to understand and reproduce and Bryant's commentary was as good as the meals he shared! Hmm。 I won’t go so far as to say I regret buying this, but I’m disappointed to report there are probably only five or six recipes here I can actually see myself trying。 I also didn’t love the organization — this is my plea to the publisher to never repeat it。

I got this cookbook as a Christmas gift, and it really was a pleasure to read。 Bonus: I can copy the pages containing kitchen tools & supplies and ask for them for future gifts, since I own almost none of the recommended equipment。 I, for one, love the playlist, and how each recipe has a suggested song (yes, there's a corresponding Spotify playlist)。 The recipes themselves are a bit intimidating, often with ingredients that only a San Franciscan would think are accessible (and I live in a major I got this cookbook as a Christmas gift, and it really was a pleasure to read。 Bonus: I can copy the pages containing kitchen tools & supplies and ask for them for future gifts, since I own almost none of the recommended equipment。 I, for one, love the playlist, and how each recipe has a suggested song (yes, there's a corresponding Spotify playlist)。 The recipes themselves are a bit intimidating, often with ingredients that only a San Franciscan would think are accessible (and I live in a major metropolitan area with lots of ethnic grocery stores)。 I look forward to trying some, though。 。。。more

Bryant Terry riffs on traditional southern dishes and makes them ethical, healthy, and, miraculously, better。 He has a gift for conjuring flavor。 This book could become a classic。

Received on the same day as Oakely's (another celebrity chef) Plants Only Kitchen, this vegan cookbook is more centered on food than face recognition。 It features many more recipies, and most of them are New American and African-American fusion cuisine。 This book is more adventurous, featuring foods many average Americans aren't familiar with: (sunchokes, millet) but has plenty of grocery store staples, too。 Get Terry's book as an intermediate step in your vegan or veggie-centered food journey。 Received on the same day as Oakely's (another celebrity chef) Plants Only Kitchen, this vegan cookbook is more centered on food than face recognition。 It features many more recipies, and most of them are New American and African-American fusion cuisine。 This book is more adventurous, featuring foods many average Americans aren't familiar with: (sunchokes, millet) but has plenty of grocery store staples, too。 Get Terry's book as an intermediate step in your vegan or veggie-centered food journey。 It's an intelligent book with photos verging on artistry and hundreds of healthy vegan recipes。 。。。more

Would be a great gift for a beginning vegan/vegetarian chef。 There aren’t a huge amount of recipes that made me think “I never would’ve put those ingredients together!” But, that’s sort of the point - unfussy recipes you can for the most part make with things in your pantry that are based on regular weeknight go-tos for his family。 Plus, tips on kitchen techniques like storage and chopping。 The spice blend and seasoning recipes in the back are gold。
