Summary

Best-Selling vegetarian cookbook destined to become a classic。

Everyone knows they should eat more vegetables and grains, but that prospect can be intimidating with recipes that are often too complicated for everyday meals or lacking in fresh appeal or flavor。 For the first time ever, the test kitchen has devoted its considerable resources to creating a vegetarian cookbook for the way we want to eat today。 The Complete Vegetarian Cookbook is a wide-ranging collection of boldly flavorful vegetarian recipes covering hearty vegetable mains, rice and grains, beans and soy as well as soups, appetizers, snacks, and salads。

More than 300 recipes are fast (start to finish in 45 minutes or less), 500 are gluten-free, and 250 are vegan and are all highlighted with icons on the pages。 The book contains stunning color photography throughout that shows the appeal of these veggie-packed dishes。 In addition, almost 500 color photos illustrate vegetable prep and tricky techniques as well as key steps within recipes。

This was actually a decent introduction to vegetarian eating and cooking。 The author explained all the foods you can eat (fruits, legumes, root vegetables, grains, eggs, etc) and remember this IS NOT a vegan cookbook because many recipes have eggs。 About the actual recipe content, it is pretty good BUT not all recipes include a picture which I find annoying。 But the information in this cook about a vegetarian lifestyle and the benefits outweighs the lay pictures that are lacking。Overall, I thoug This was actually a decent introduction to vegetarian eating and cooking。 The author explained all the foods you can eat (fruits, legumes, root vegetables, grains, eggs, etc) and remember this IS NOT a vegan cookbook because many recipes have eggs。 About the actual recipe content, it is pretty good BUT not all recipes include a picture which I find annoying。 But the information in this cook about a vegetarian lifestyle and the benefits outweighs the lay pictures that are lacking。Overall, I thought this was a great vegetarian cookbook and recommend it for people who want to eat healthier, want more fruits or vegetables in their diet or for the ethical reasons (that is me)。 Glad my library had this。 。。。more

This is an excellent cookbook, the pictures were gorgeous and the reasons behind the way things were cooked were sound too。 Very detailed。

I love this vegetarian cookbook。 The recipes are easy to follow and make。 There are a lot of great options for vegetarians in this cookbook。 They taste amazing and are healthy。 I would recommend using this even if you are not a vegetarian and just want some healthier options。

Ava

Really good book with a wide variety of dishes。 We have tried the Thai curry, beans and rice, blackeyed peas and greens and more。 All the recipes were easy to make and turned out well。

Eva

Great recipes but sometimes the formatting was not intuitive and I missed some ingredients because they were in the next column I missed!

I am one of those people who actually reads a cookbook, recipe by recipe, imagining how each dish might taste, how long it might take to make, and whether those two elements make a strong enough case for me to include it among the hundreds and hundreds of recipes I have collected。 I am particularly fond of America's Test Kitchens scientific approach to cooking and baking because the knowledge about how food elements interact with one another and how to manipulate those features makes it possible I am one of those people who actually reads a cookbook, recipe by recipe, imagining how each dish might taste, how long it might take to make, and whether those two elements make a strong enough case for me to include it among the hundreds and hundreds of recipes I have collected。 I am particularly fond of America's Test Kitchens scientific approach to cooking and baking because the knowledge about how food elements interact with one another and how to manipulate those features makes it possible as a cook to go beyond the printed recipe and begin to tailor cooking to my individual tastes and talents。 True, many of their recipes go way beyond what I am willing to invest these days in time and ingredient investment, but the techniques gleaned from their work can be applied to all aspects of cooking and other recipes。 This book is so popular at our library that I found I couldn't finish it in the two weeks I was given, so I have purchased a copy that I can peruse at my leisure。 If you enjoy knowing why foods cook/taste/turnout the way they do so that you can apply that knowledge to the next meal you make, then this book will please you。 If you just want to put a quick meal on the table, then look elsewhere。 。。。more

My partner and I are vegetarians, I am also lactose intolerance so we often have vegan dishes。 This is the first cookbook that I have "worked" through。 I learned a lot from it and we made a lot of dishes from it。 We found a few recipes that we really enjoyed。 The instruction are rather easy to follow for most of the recipes。 I plan on cooking more from this cookbook and my even order a new one since ours is rather well loved now。 My partner and I are vegetarians, I am also lactose intolerance so we often have vegan dishes。 This is the first cookbook that I have "worked" through。 I learned a lot from it and we made a lot of dishes from it。 We found a few recipes that we really enjoyed。 The instruction are rather easy to follow for most of the recipes。 I plan on cooking more from this cookbook and my even order a new one since ours is rather well loved now。 。。。more

I feel like I don't have too much to say because my star rating should say it all! I turn to this book all the time; it's one of my main cookbooks both for everyday meals and holidays。 America's Test Kitchen recipes rarely fail to please (so long as you follow the directions properly) and the level of thought and care they put into their main recipe books is obvious here in their vegetarian recipe collection。 This isn't just a book for people who don't want to eat meat, it's for anyone who wants I feel like I don't have too much to say because my star rating should say it all! Great! Easy recipes with many ingredients already available in my pantry。 There were a lot of great tips on how to pick which ingredient (e。g。 grains, pastas, cheeses, bread) and how to properly store them。 Recipes are realistic too; every recipe I've made so far comes out exactly as (I think) it should。 Great! I love that these recipes are so achievable。 Having switched my entire family to vegetarian diet, I was having a hard time finding good recipes that were relatable to our old diet but still wholesome meals。 They did an outstanding job describing everything and breaking down why these recipes work and how they do them。

Kendrick

This book has tons of info; lots of prep instructions and helpful info about picking good quality supplies。

As I've been attempting to introduce more vegetarian fare into my diet, I've struggled with creating meatless meals that are both filling and tasty。 Enter this cookbook。 It's very comprehensive, showing how meatless dishes can be mains as well as side dishes in clear, easy-to-follow steps。 Two of the recipes have been misses (see my reading updates for details), but the rest were fantastic。 I ended up buying my own copy, so I only managed to make a handful of recipes in the two months I was able As I've been attempting to introduce more vegetarian fare into my diet, I've struggled with creating meatless meals that are both filling and tasty。 Enter this cookbook。 It's very comprehensive, showing how meatless dishes can be mains as well as side dishes in clear, easy-to-follow steps。 Two of the recipes have been misses (see my reading updates for details), but the rest were fantastic。 I ended up buying my own copy, so I only managed to make a handful of recipes in the two months I was able to check this out of the library。 。。。more

This is a solid cookbook。 It covers just about every kind of food I would want and provides just enough variations to inspire my own endeavors。 However, I regret that I have had this cookbook for YEARS and never looked at it because the format was so overwhelming。 There are several recipes on a page and they don't all have photos (I really want photos in my cookbooks)。 Each recipe comes with a "why this works" section, but it only explains what the cooks did, not the actual food science behind w This is a solid cookbook。 It covers just about every kind of food I would want and provides just enough variations to inspire my own endeavors。 However, I regret that I have had this cookbook for YEARS and never looked at it because the format was so overwhelming。 There are several recipes on a page and they don't all have photos (I really want photos in my cookbooks)。 Each recipe comes with a "why this works" section, but it only explains what the cooks did, not the actual food science behind why the recipe works。 That is disappointing。 So, if you want to have a cookbook on hand for a leisurely Sunday morning look-through, or want to know vegetarian food science, this isn't it。 However, if you want a good cookbook (one with some great recipes for fried tofu and tempeh steaks) then pick this up。 。。。more

I am really enjoying this cook book, I love the test kitchen, but this one in particular has the full range of vegetarian recipes from main dishes to desserts to side dishes。 I learn from their books as they explain why each recipe works and have a huge section at the beginning introducing the reader to vegetarian cooking。 I am a fledgling vegetarian so this book has been vital!

Great cookbook- recommend the Campanelle pasta with Roasted Cauliflower, and the Easy Weeknight Chili, although you really can't go wrong with any of the recipes。 Recipe "steps" are deceptive because they actually group several steps into one, but the work is worth it- the food is delicious。 Great cookbook- recommend the Campanelle pasta with Roasted Cauliflower, and the Easy Weeknight Chili, although you really can't go wrong with any of the recipes。 Recipe "steps" are deceptive because they actually group several steps into one, but the work is worth it- the food is delicious。 。。。more

What an excellent cookbook! There is so much content in this book。 A majority of the recipes are naturally gluten free or can easily be adapted to be gluten free, and many recipes are vegan。 (If you are looking specifically for vegan cooking I wouldn't choose this cookbook, but it has enough vegan options if you need something vegan for a meal or party。)This book covers a lot--just look at the chapters: hearty vegetable mains; soups, stews, and chilis; pasta, noodles, and dumplings; rice and gra What an excellent cookbook!
