Tastewise this book is brilliant! All vegetarian, we had the chance to cook many of the dishes。 They are not simple to make, actually, they often take ages, however, the result has always been: Wow, THAT's really amazing! The rich diversity and many unexpected combinations can please anyone! Healthwise, it's an extremely fatty book。 600 ml of oil is nothing for a recipe for 4 :-) This is why I am putting it back on the shelf and dwelling in a healthier world。 Thank you, Mr Ottolenghi! I love Ottolenghi’s previous cookbooks, but I thought he had more or less exhausted what he could do。 As he says, “how many ways can there be to roast an eggplant?” But this cookbook is an evolution from his previous work。 Where most of his previous recipes have been focused in Middle Eastern cuisine, this cookbooks is… not “fusion,” which to me implies a mixing of different cuisines, but rather post-national cuisine。 With the help of Ixta Belfrage, Ottolenghi is now into using ingredients with I love Ottolenghi’s previous cookbooks, but I thought he had more or less exhausted what he could do。 As he says, “how many ways can there be to roast an eggplant?” But this cookbook is an evolution from his previous work。 Where most of his previous recipes have been focused in Middle Eastern cuisine, this cookbooks is… not “fusion,” which to me implies a mixing of different cuisines, but rather post-national cuisine。 With the help of Ixta Belfrage, Ottolenghi is now into using ingredients with big, bold flavors。 Sometimes this is in context of the cuisine they come from, other times, like with the cascabel chile oil with butter beans, it’s just because that’s the big flavor they want to play with for the dish。 This cookbook isn’t for everyone。 It is generally meat-free and vegetable based, and it features more adventurous ingredients like rose harissa, black garlic, and a wide array of chiles。 If you’re a somewhat experienced and adventurous cook and a fan of big flavors (like me), this book will be great for you。 。。。more

What an adventure and a treat this has been! A word of warning—the recipes are pretty labour intensive even compared to Ottolenghi’s other books, but by golly the man knows his stuff and every time I’ve tried a recipe in this book, it’s been worth the effort (save for one or two disasters that were pretty much my fault)。 I’ve learned a lot about spices and different kinds of chillis from cooking things from this book。 There’s no going back now and my local Middle Eastern market isn’t getting rid What an adventure and a treat this has been! I loved that this cookbook is entirely plant-based, and the recipes are inventive, mixing cuisines and flavors in new ways。 I was turned off by the long ingredient lists and relative length and complexity of recipes。 Although I can make space for long and complicated recipes, especially for weekend cooking, I was hoping for more simplicity here。

BEST -all vegetarian- recipes ever。 Seriously good, one surprise after another。If I got to only use one recipe book for the rest of my life, this would be it。 Get the 20 basic ingredients and get cooking! Some are quite quick and easy, some a bit more work but never all that hard to make。 And but, is it worth the trouble。。。 flavours I never had before。

beautiful pictures and lots of interesting and new combinations of flavours and techniques。。。 although requires the right audience for these recipes - ideally those with no food allergies/restrictions and openness to new flavours。 My household is not at that point right now。

A very close toss up between 4 and 5 stars。The good:* I want to cook almost everything in this book - it's rare for me to want to make such a high proportion of the dishes。* Most recipes include an ingredient or technique outside of my comfort zone, but not so far outside that it's intimidating。 It's in the Goldilocks zone of cookbooks and very inspiring for the amateur fusion cook!* Beautiful photos of every dish, with great attention to detail on presentation。* Summarises all the cool sauces, A very close toss up between 4 and 5 stars。The good:* I want to cook almost everything in this book - it's rare for me to want to make such a high proportion of the dishes。* Most recipes include an ingredient or technique outside of my comfort zone, but not so far outside that it's intimidating。 It's in the Goldilocks zone of cookbooks and very inspiring for the amateur fusion cook!* Beautiful photos of every dish, with great attention to detail on presentation。* Summarises all the cool sauces, marinades and dressings that can be made in batches and stored for later use to spice up other meals。* Includes pairings for each recipe in case you don't know how to incorporate it into a meal plan。* Very nicely presented and just the right length of preamble to chapters and recipes to add context but not detract from the main purpose of cooking。The not so good:* Intros to the chapters feels very comparable to Salt, Fat, Acid, Heat but without so much of a clear direction, so probably unlikely to reuse these for reference。 * Grouping together multiple recipes steps in one bullet point is a real bugbear of mine - I don't like one step in a recipe to be a dozen lines long with a dozen substeps and taking several hours to complete。 Feels like a case of trying to hide the complexity when the recipe could also afford to be a little simpler。* A little cringey at times。Would very much recommend for the unique recipes。 。。。more

This book is a fascinating take on plant based recipes, and I will definitely try a few of the recipes but even for me (a fairly adventurous home vegan cook) I found some of the ingredient lists to be a tad overwhelming。 I have no idea where I would find some of these exotic sounding ingredients but we will see。 I would say this book is for the highly adventurous home chef。 I also wish there were pictures of every recipe, I would rather fewer recipes and more pictures 。

Another beautifully crafted cookbook from Ottolenghi。 Not only are his cookbooks nicely designed with lots of colour photographs but they feature recipes that one would want to make。 This cookbook is devoted to a host of vegetarian inspired recipes。

My librarian recommended this book and then I proceeded to renew it multiple times as I couldn’t let it go (eventually I received it as a birthday present so the library has their book back) Phenomenal recipes that will elevate any cooking to a much higher level。 Tremendously informative and precise explanations on flavoring。 I’ve gotten to explore tons of chilis, spices, combinations that I never would have otherwise。 I even ended up ordering fresh makrut leaves from someone in California (yep, My librarian recommended this book and then I proceeded to renew it multiple times as I couldn’t let it go (eventually I received it as a birthday present so the library has their book back) Phenomenal recipes that will elevate any cooking to a much higher level。 Tremendously informative and precise explanations on flavoring。 I’ve gotten to explore tons of chilis, spices, combinations that I never would have otherwise。 I even ended up ordering fresh makrut leaves from someone in California (yep, they were worth it)。 Highlights for me are the white bean mash (which I make once a week now), dirty rice, cacio e Pepe, potato with lime, coconut and makrut lime black beans。 The book is veg-predominant and easily adapted to make it full vegetarian (like skipping the anchovies in some recipes)。 These recipes do take some time and some require special tools to make it more fun to make (like a mandolin) but absolutely worth it。 One of the best cookbooks I’ve ever read/owned。 I’ll definitely try other recipes in here as well。 。。。more
