Summary

'Ottolenghi changed the way we cook in this country just as surely and enduringly as Elizabeth David’s A Book of Mediterranean Food had in 1950。 It brought into our kitchens bold flavours, a vivid simplicity, a spirited but never tricksy inventiveness and, above all, light。’ Nigella Lawson

Inspired by their childhoods in West and East Jerusalem, Yotam Ottolenghi’s and Sami Tamimi’s original cookbook Ottolenghi: The Cookbook showcases fresh, honest, bold cooking and has become a culinary classic。

Yotam and Sami's inventive yet simple dishes rest on numerous culinary traditions, ranging from North Africa to Lebanon, Italy and California。 First published in 2008, this new updated edition revisits the 140 original recipes covering everything from accomplished meat and fish main courses, through to healthy and quick salads and suppers, plus Ottolenghi's famously delectable cakes and breads。

A new introduction sheds fresh light on a book that has become a national favourite。

Ottolenghi is an award-winning chef, being awarded with the James Beard Award 'Cooking from a Professional Point of View' for Nopi in 2016, and 'International Cookbook' for Jerusalem in 2013。 In 2013 he also won four other awards for Jerusalem。

Praise for Ottolenghi:

‘[A] book that has barely left my kitchen…the fact that Yotam Ottolenghi and Sami Tamimi have been generous to put their recipes in a book is something I had long dreamed of’ Nigel Slater, The Observer Magazine

‘Possibly the best cookery book I have ever owned。 The recipes…are well-tested and produce results that will astound your tastebuds。 Try the aubergine-wrapped ricotta gnocchi with sage butter, the chicken with three-rice salad or their famous meringues and you'll know just what I mean。’ Caroline Jowett, Daily Express

‘A wonderful book for vegetarians and cake lovers alike’ Bee Wilson, Sunday Times

Liked where this was going, but a lot of the ingredients seemed a bit esoteric。 Good for inspiration, though。

After all the cookbooks on my shelves I didn't think I'd want room for one more。 But yes, definitely this one。 Ottolenghi delivers once again。 Some of the dishes here will be multiplied x2 or x3 especially for large families like mine。 My favorites, as usual, are the salad ideas。 After all the cookbooks on my shelves I didn't think I'd want room for one more。 But yes, definitely this one。 Ottolenghi delivers once again。 Some of the dishes here will be multiplied x2 or x3 especially for large families like mine。 My favorites, as usual, are the salad ideas。 。。。more

I love this cookbook。 I want to eat everything in it, but Middle Eastern / Mediterranean food styles are my personal favorites。 I also wish there were more pictures of the recipes because the pictures in there are beautiful。 And because I find myself picking this up like a magazine and just browsing through it quite often。 Some people hate this and prefer cookbooks to remain instruction manuals - I am not one of those people。 Now when it comes to the food。 The recipes are fresh, delicious, and l I love this cookbook。 I want to eat everything in it, but Middle Eastern / Mediterranean food styles are my personal favorites。 I also wish there were more pictures of the recipes because the pictures in there are beautiful。 And because I find myself picking this up like a magazine and just browsing through it quite often。 Some people hate this and prefer cookbooks to remain instruction manuals - I am not one of those people。 Now when it comes to the food。 The recipes are fresh, delicious, and look somewhat simple, but you will need to be a slightly experienced cook to execute them well。 And if not, don't let that stop you。 Just remember that having a little patience goes a long way, and view these recipes as more of a cooking experience。 This is not the genre of meals in 30 mins or less。 So pour yourself a glass of wine, turn on some music, and take your time。 Your tastebuds will thank you。 Also, it's worth noting that some of the ingredients may not be as easily accessible in more rural areas, but you can find a lot of these ingredients from quality sellers online。 Be sure to plan ahead or find solid substitutes。 。。。more

Decent if your skills are advanced。 Not terrific for the average home cook。

I loved reading their bios, how they came together to form their restaurants, their food philosophy, and their favorite ingredients: salt, garlic, lemon, and olive oil are the first four! The recipes range from the very simple to the aspirational。 Many ingredients won’t be readily obtained, or even heard of, by the average home cook: sumac, rose and orange blossom water, arak, speck, manouri cheese, samphire, Jerusalem artichokes, haricots verts, salsify roots, pomegranate molasses, chervil leave I loved reading their bios, how they came together to form their restaurants, their food philosophy, and their favorite ingredients: salt, garlic, lemon, and olive oil are the first four! The recipes range from the very simple to the aspirational。 Many ingredients won’t be readily obtained, or even heard of, by the average home cook: sumac, rose and orange blossom water, arak, speck, manouri cheese, samphire, Jerusalem artichokes, haricots verts, salsify roots, pomegranate molasses, chervil leaves, dried sour cherries, gooseberries, elderflower liqueur, star anise, and more。 The photos looked great。 I just wish that there were more of the food。 There were so many over-the-fold photos that were such a waste of space and a lost opportunity to showcase the incredible-sounding food, such as double page photos of the back of woman, a candlestick, a wall and doorway, a girl sitting in a chair, a woman talking to a blurry figure, and a dog on the street。 This is definitely not a cookbook for a beginner。 Most of all it makes me want to return to London to eat at his establishments。 。。。more

If you don't like lemon and garlic 。。。 skip to the last page。Truly, this is an adult picture book。 Gorgeous photography, enticing introductions and beautiful recipes。 It is my practice to always have an oversized cookbook on hand that will hoist me out of a culinary rut。 Plus, I truly adore the marriage of lemon and garlic。 The recipe for Kosheri (a popular Egyptian dish made of lentils and rice and pasta) took me back to a magical evening when a newly married couple made this involved dish for If you don't like lemon and garlic 。。。 skip to the last page。Truly, this is an adult picture book。 Gorgeous photography, enticing introductions and beautiful recipes。 It is my practice to always have an oversized cookbook on hand that will hoist me out of a culinary rut。 Plus, I truly adore the marriage of lemon and garlic。 The recipe for Kosheri (a popular Egyptian dish made of lentils and rice and pasta) took me back to a magical evening when a newly married couple made this involved dish for my sister and me。 Both mostly, I noted combinations of flavors。 fennel + fetaradish + fava beancucumber + poppy seedeggplant + saffron yogurtasparagus + manouri (a soft cheese)beets + chervilparsnip + pumpkinlamb + cilantrochicken + grapefruitturkey + cumin + coriandertuna + pistachio + papayapistachio + cardamomYum! A beautifully laid out cookbook。 I enjoyed the detailed descriptions and carefully chosen recipes that represent the chefs and their restaurant。 While I might try some of the recipes some of the ingredient lists sounded difficult to achieve for the average person。 That being said they often gave substitutes for some of the items which would be helpful。

Loulou

Some of the ingredient lists are super long, but the end results mean it is certainly worth the effort。 Beautiful, healthy food where taste and flavours are most important。 An inspiring book and great addition to anyone’s book shelf。

A beautiful cookbook with quite a few worthy recipes but I don't like the layout。 Recipes span multiple pages, some staring in the middle of a page。 As a cook, this is not my preference。 Most of the ingredients are easy enough to procure if you are willing to make a few substitutions。 The directions seem clear。 I especially liked the first few pages of introduction。 A beautiful cookbook with quite a few worthy recipes but I don't like the layout。 Recipes span multiple pages, some staring in the middle of a page。 As a cook, this is not my preference。 Most of the ingredients are easy enough to procure if you are willing to make a few substitutions。 The directions seem clear。 I especially liked the first few pages of introduction。 。。。more

Good selection of recipes。 Interesting ingredients for me。。。 the recipes I tried were delicious。 The stories incorporated were pleasantly aside and not taking away from the food。 Great book。

This cookbook contains beautiful photos of foods in all categories, vegetables, meats, dips, and sweets。 The recipes sound delicious and I am anxious try many of them。 Ottolenghi is a restauanteur in London。 I hope to eat in some of the restaurants one day。 Until then, I will try my hand at these recipes, beginning with roast butternut squash with burnt eggplant dip。

Sarah

As always, delicious and attainable meals from Ottolenghi。 I'm looking forward to creating more of his recipes and my family is excited to eat them! 5/5 stars。 As always, delicious and attainable meals from Ottolenghi。 I'm looking forward to creating more of his recipes and my family is excited to eat them! 5/5 stars。 。。。more

Fresh flavor ideas for entrees and side dishes, but it is the baking section that blows other cookbooks away。 These recipes are so interesting, innovative, and approachable that I can’t wait to try them。

After visiting and eating at Ottolenghi's laboratory in London, I fell in love with his mantra and food。 The toffee brownies are to die for and I've made the sweet potato gratin multiple times。 So many fantastic recipes with great flavors!
