I'm never a fan of non-vegetarians writing vegetarian cookbooks。 As soon as I read this one, I had a feeling the author was not a vegetarian and I looked it up。 Wilkerson is releasing two cookbooks around the same time and her other one (and her Instagram) is filled with things like deep fried chicken tenders。It's not that non-vegetarians can't make up vegetarian recipes but you can always tell when they usually eat a standard American diet。 It's all Here's really rich and fattening side dishes I'm never a fan of non-vegetarians writing vegetarian cookbooks。 As soon as I read this one, I had a feeling the author was not a vegetarian and I looked it up。 Wilkerson is releasing two cookbooks around the same time and her other one (and her Instagram) is filled with things like deep fried chicken tenders。It's not that non-vegetarians can't make up vegetarian recipes but you can always tell when they usually eat a standard American diet。 It's all Here's really rich and fattening side dishes to make up for what you're missing and here's a traditional meat dish where I just substituted jackfruit or mushrooms。 Ingredients like jackfruit, oyster mushrooms, beans and tofu can be delicious but we generally do things like press, marinade, braise and steam them first to really nail the right flavors and textures。 If you eat tofu prepared by a vegetarian it'll be delicious, by a non-vegetarian it'll taste like a sponge you put in a blender。Other issues: • These recipes are so fattening。 They are brimming with heavy cream, butter, cheese, sugar and other high calorie, unhealthy ingredients。 I'd double my weight and get diabetes pretty fast eating by this cookbook。 • Most of the recipes are not that healthy even though Wilkerson acknowledges how unhealthy traditional soul food can be。 There's so much cheese, pasta, sugar, corn syrup, whipping cream, butter。。。 Also uses unhealthy ingredients like shortening and canola oil。 • Definitely not a great book for vegans。 There are a few vegan recipes but most of them use a lot of animal products。 • Complete lack of traditional vegetarian ingredients like tofu, seitan and tempeh。 I'm guessing that's because Wilkerson is not familiar with these but they make great ingredients in some recipes and also offer protein。 Most people don't want vegetarian cookbooks full of soy these days, but it's weird to have not a single tofu recipes in a supposedly vegetarian cookbook。 Seitan is also one of the most common ingredients in vegan soul food recipes because of its meaty texture and great taste if you add the right flavors。 • Almost no photographs for recipes。 • Okay for gluten free families but not great。 Most of us know how to substitute but it's written with regular flour and pasta in mind。 Gluten free recipes are marked。 • Very high in carbs and fat, low in protein (another case where vegetarians know tips and tricks to up the protein)。 • No nutritional info on recipes。 This one is a deal breaker for me in cookbooks。 So many people need to track sodium, fat, carbs, protein, fiber, sugars, and/or calories。 I really hate to rate this so low but it's hard for me to rate this one as more than just okay。 * Thanks to the publisher for a review copy。 All opinions are my own。 。。。more
